I didn’t want to make any of the recipes that I have here and the eggs were due to expire in a couple of days. Rather than them going to waste, I decided to make breakfast for dinner.

I made a relatively easy scrambled eggs and toast. It was thoroughly enjoyable. I like to eat my scrambled eggs with ketchup so that they taste even better. Don’t judge. You should try it.

Lesson learned: Nothing, it’s eggs in a skillet. What’s hard about that? (I would have said “Lots of things” about 5 years ago, but I have at least mastered my egg making skills.)

Positive lesson learned: When you don’t want to make anything for dinner, make breakfast.
