I’m still hungry.

Tonight’s meal was Lemon Tilapia with Steamed Broccoli and a “Hearty” Dinner Salad.

Although it was delicious, I’m currently eating a peanut butter and jelly sandwich to fill the void in my stomach that was left from said meal.

However, I must say that I am quite proud of the improvement in my time management skills in the kitchen. I prepped all of the ingredients for the salad before hand. Then while the fish and broccoli were cooking, I mixed all of the salad ingredients together. It was nothing short of a culinary symphony of perfect timing in my kitchen this evening.

Lesson learned: The meal needed rice. I should have had enough foresight to see this coming.

Positive lesson learned: Tilapia filets break apart very easily…..then you can feed it to your kid. Kids don’t care about presentation.
